The Inspiration
It began, as most obsessions do, with a single story. Arthur Conan Doyle's Baker Street detective has haunted the imagination for over a century — not merely as a character, but as a method. The rigorous observation. The refusal to accept the obvious. The pleasure of a problem solved with elegance.
221B Bar is an attempt to bring that sensibility to the glass. Every cocktail on the menu is a case file: a set of ingredients assembled with intention, a method that rewards precision, a result that should surprise you even when you know exactly what went into it.
The name is borrowed, of course. But the spirit — the belief that craft and curiosity belong together — is entirely our own.
The Method

We apply the same logic to cocktails. Strip away the unnecessary. Question every ingredient. If something is on the menu, it earned its place — not through convention, but through the work of elimination and refinement.
The bar programme draws on Victorian-era flavour profiles — smoke, bitters, fortified wines, aromatic spirits — reinterpreted through modern technique. We are not a theme bar. We are a bar with a point of view.
